Why do we distill water?

Distilled water has all impurities removed from it. It's nothing but hydrogen and oxygen. Filtered water, on the other hand, has a lot of the mineral/chemical content removed in order for it to taste better. Distilled water leaves no residue when it evaporates so I use it in my steam iron to prevent mineral buildup. I drink filtered water however because it tastes better than tap water.
